I've been making an effort to eat better lately, and I've even been considering going vegetarian. Mostly. I don't think I could ever give up Thanksgiving turkey. Even if I don't make the switch to completely meatless, I am definitely eating much less meat. It's healthier, cheaper, and from what I have read about the meat industry, safer. I've added The Omnivore's Dilemma to my goodreads list and I'm looking forward to reading it.
ANYWAY all of that to say. I found this list of 20 reader-submitted "food rules" on nytimes.com. They are funny and pretty, and mostly true! My favorite: "If you're not hungry enough to eat an apple, you're not hungry." I've been eating a lot of apples this week.
Chris and I ate this for dinner last night. Super easy and super delicious. And great leftovers!
